DELRAY BEACH, FL (BocaNewsNow.com) (Copyright © 2022 MetroDesk Media, LLC) — An inspector from the Florida Department of Business and Professional Regulation did not like the situation at “Another Broken Egg Cafe” at 430 East Linton Blvd. during two recent inspections. The inspections, on March 7th and again on March 8th, both led to violations and a requirement of a “follow-up” inspection.

On March 7th, the inspector noted the following violations (we publish the issues exactly as they are noted in the public file):

High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. drawers under far left flat top: liquid egg white (53°F); liquid egg (51°F); raw shell egg ambient (67°F). Unit has an ambient temperature of 67°F. Operator states items have been in unit for up to 2 hours. Operator moved items to walk in. Monitored unit for approximately 45 minutes and retook ambient temperature at 59°F. Operator called for service 4 drawer flip top far left:diced tomatoes (47°F); cheese (48°F); cooked sausage (50°F); lobster (47°F); raw shrimp (48°F). Operator states items have been in unit for approximately 2 hours. Instructed operator to ice items. Monitored unit for 1 hour and items dropped in temperature due to icing. Operator called for service **Corrective Action Taken** **Warning**

Intermediate – No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Establishment has written plan on hand but not filled out. Provided new written plan. Discussed with operator **Repeat Violation** **Warning**

Intermediate – Required employee training expired for all employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association scheduled for safe staff for all employees. Signs posted throughout establishment **Corrective Action Taken** **Repeat Violation** **Warning**

Intermediate – Spray bottle containing toxic substance not labeled. Spray bottle containing red substance at ware washing area not labeled. Operator labeled. **Corrected On-Site** **Repeat Violation** **Warning**

Then, on March 8th, the following issues were recorded:

Unit has an ambient temperature of 51°F. Operator discarded. 4 drawer flip top far left: lobster 49°F, cream cheese 53°F, salsa 51°F, nova salmon 48°F, cheese 48°F. Unit has an ambient temperature of 47°F-48°F. Per operator Items being held in unit for approximately 1 hour. Operator removed. Operator states tech was out and states units have small leak. TCS food items being held in unit at time of CB inspection not under any control **Admin Complaint**

The violations did not result in a closure of the restaurant. An unannounced reinspection is now pending.
