BOCA RATON, FL (BocaNewsNow.com) (Copyright © 2023 MetroDesk Media, LLC) — The restaurant inside the gated HOA of “Boca Bridges” received several “high priority” violations from the Florida Department of Business and Professional Regulation during a health inspection just before Christmas. The restaurant was not ordered to close, but is subject to an unannounced inspection likely over the next several weeks.

Per BocaNewsNow.com policy, the following is the official list as filed by the inspector. We do not edit the official record.

High Priority – Employee touching ready-to-eat food with their bare hands – food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed employee handling lettuce while preparing cold wrap with bare hands. Discussed with operator. Operator instructed employee to put on gloves Corrective Action Taken. Warning.

High Priority – Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Dish machine tested twice at less than 160F. Instructed operator to manual sanitize using triple sink. Operator called for service Corrective Action Taken. Warning.

High Priority – Nonexempt fish offered raw or undercooked has not undergone proper parasite destruction. Fish must be fully cooked or discarded. Raw salmon intended to be used for sushi does not have proper parasite destruction. Operator spoke with distributor, states salmon was sent in error from intended product. Operator will fully cook Corrective Action Taken. Warning.

High Priority – Raw animal food stored over/not properly separated from ready-to-eat food. Raw tuna stored above ready to eat lettuce in cook line cooler. Operator reorganized Corrected On-Site. Warning.

Basic – In-use knife/knives stored in cracks between pieces of equipment. Operator removed Corrected On-Site. Repeat Violation. Warning.

The restaurant is managed by a private catering company that also provides food service for a nearby community.

  1. The violations that Boca Bridges restaurant had, are very serious. As you know, or maybe don’t know, I read, and monitor over 70 restaurant inspections every week. I know the trends, and I know what are violations that ‘occur regularly’ in restaurants and these that occurred at Boca Bridges are way out of the ordinary, so much so that I am writing to you to be on the look out.

    These are violation that are very serious, and show to me that there is no manager there that knows food safety nor any one there that knows to monitor the company they have hired to do their catering.
