BOCA RATON, FL (BocaNewsNow.com) (Copyright © 2024 MetroDesk Media, LLC) — If you’re thinking of salad after gorging on Thanksgiving food, you may want to skip Just Salad at 9674 Glades Road. The restaurant received a number of “high priority” violations during its inspection on on November 25th.
Per BocaNewsNow.com policy, the following is the unedited list of violations as reported by the health inspector to the Florida Department of Business and Professional Regulation. We do not alter these reports for spelling or grammar.
High Priority – Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed at steam table in the front chicken (108F -147F Hot Holding). Per operator food was cooked less than 2 hours ago and placed in steam table. Observed steam table with not enough water to keep food hot held. Operator move chicken to be reheated at 165F or above. chicken (175F – Reheating). **Corrected On-Site** **Admin Complaint**
High Priority – Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. Lettuce and dressings using as a time as public health control plan. Operator time marked 11-3. **Corrected On-Site**
High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed at cold station at front counter cooked eggs (43-52F – Cold Holding). Per operator food was unit less than two hours ago. Observed eggs past the fill line of the container. Operator removed eggs past fill line and stored into another cooler to quick chill. **Corrective Action Taken**
High Priority – Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed in walk in cooler raw chicken over raw shell eggs. Provided operator with proper separation of raw storage poster.
Intermediate – Spray bottle containing toxic substance not labeled. Observed at mop sink two spray bottles unlabeled. Operator labeled glass cleaner and beach. **Corrected On-Site** **Repeat Violation**
Basic – Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Observed at dish washing area containers not being stored inverted.
Basic – In-use knife/knives stored in cracks between pieces of equipment. Observed in kitchen knives between the soiled and the knife block. Operator removed. **Corrected On-Site**
Basic – Old labels stuck to food containers after cleaning. Observed old labels on containers in kitchen underneath the middle table.
Just Salad was not ordered to close as a result of the inspection results. An unannounced follow-up inspection is pending. The restaurant had issues with another inspection in May of 2022.
