BOCA RATON, FL (BocaNewsNow.com) (Copyright © 2024 MetroDesk Media, LLC) — Flakowitz Deli at 1999 North Federal Highway in Boca Raton received five “high priority” violations during an inspection December 17th conducted by a health inspector reporting to the Florida Department of Business and Professional Regulation. While the restaurant was not ordered to close, an unannounced follow-up inspection will be conducted. High Priority – Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. sausage (122F – Hot Holding); chicken breast (88F – Hot Holding) in steam table at cook line. In unit less than four hours. Double panned. Reheated to 165F. **Corrective Action Taken** **Warning**

High Priority – Operating with an expired Division of Hotels and Restaurants license. **Warning**

High Priority – Employee washed hands with no soap. Chef observed cracking raw shell eggs with one barehand and one gloved hand. Chef did not remove glove and rinsed hand and glove in hand sink. No soap was used. Glove was not removed to wash hands properly before handling spatula to cook. **Warning**

High Priority – Employee touching ready-to-eat food with their bare hands – food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Employee handling ready to eat bagel with barehands while spreading cream cheese at front Counter **Warning**

High Priority – Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishwasher (Chlorine 0ppm). Intermediate – Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. sliced tomatoes (50F – Cooling) at 9:00 am to 49F at 9:17 am since 7 am flip top cooler on cook line.
