Operator removed food out of temp to place into another container to quick chill. Observed in flip top #3; butter chips (47F); cream cheese (49F). Per operator food not prepared or portioned today. Food held in unit less than four hours. Operator placed butter chips and cream cheese below flip top cooler to quick chill. Observed stored at cook line in ice bath liquid egg whites 67F. Per operator food not prepared or portioned today. Food held in unit less than four hours. Observed food not fully submerged in ice. High Priority – Raw animal foods not properly separated from one another based upon minimum required cooking temperature when stored in a freezer – not all products commercially packaged. Observed in tall reach in freezer raw burgers stored over raw salmon. Operator stored raw burgers properly. **Corrected On-Site**
High Priority – Employee touched soiled apron/clothes and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed Employee touched apron and then proceeded to touched berries without washing hands and changing gloves. Advised employee to wash hands. **Corrected On-Site**
Intermediate – Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed in flip top cooler #2 sliced tomatoes 47-51F at 10:00 to 48F at 10:35 (cooling since 9:30); At this current rate of cooling food will not reach 41F or below within 4 hrs. Observed foods past the fill line. Operator placed tomatoes into walk in cooler. **Corrective Action Taken**
Basic – Unwashed fruits/vegetables stored with ready-to-eat food. #1 Observed unwashed avocados stored over French toast. Operator removed. #2 Observed unwashed tomatoes stored over cream cheese. Operator removed. **Corrected On-Site**
Basic – Soiled cloths, linen, aprons, coats, or other uniform apparel not kept in a suitable container prior to laundering. Observed at cook line soiled cloths stored on cutting boards.
Basic – Cutting board has cut marks and is no longer cleanable at cook line. **Repeat Violation**
Basic – Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Operator removed from packaging. **Corrected On-Site**
