Three High Profile Violations

BOCA RATON, FL (BocaNewsNow.com) (Copyright © 2021 MetroDesk Media, LLC) (News App readers click here) — An inspector from Florida’s Department of Business and Professional Regulation cited Rex Baron — a virtual reality theme restaurant at Boca Raton Town Center Mall — with multiple “high priority violations.”

Many of the violations were cleared on a follow-up inspection, but one was not.

According to a report obtained by BocaNewsNow.com, Rex Baron was inspected on February 24th. The inspector found:

High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. cut tomatoes (49°F – Cold Holding); cotija cheese (48°F – Cold Holding) Observed in flip top cooler at cook line on far right. Chef stated unit has been going in and out of temperature. Chef stated items have been in cooler for less than 3 hours. Operator moved items to a working reach-in cooler. butter (49°F – Cold Holding); salsa (48°F – Cold Holding); mozzarella cheese (48°F – Cold Holding) Observed in far right flip top cooler across from gas stove. Chef stated cooler is most likely in defrost mode. Chef states items have been in cooler for less than 3 hours. High Priority – Bar dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Bar Dishwasher (Chlorine 10ppm) Advised operator to wash glasses by hand or use dish machine in kitchen that is functioning properly. Operator called for service. **Warning**

High Priority – Operating with an expired Division of Hotels and Restaurants license. **Admin Complaint**

A basic violation was noted as well:

Basic – Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. #1: Observed employee bag on serving station area. Operator removed. #2: observed employee bag at bar area on table next to dish machine. Operator removed. **Corrected On-Site** **Warning**

When the inspector returned the following day, on February 25th, this was noted:

Operator called for service. **Warning** – From follow-up inspection 2021-02-25: Operator stated that service man did not come in the morning but called him in front of me during the inspection. **Time Extended**

At no time was Rex Baron closed. It is located in the north wing of Town Center Mall.
