“High Priority” Violations Found During Two Inspections. Warm Cheese, Meat … Expired Food.

DELRAY BEACH, FL (BocaNewsNow.com) (Copyright © 2021 MetroDesk Media, LLC) — Wood and Fire — a popular pizza restaurant at 5199 West Atlantic Avenue in Delray Beach is facing an “administrative complaint” from Florida’s Department of Business and Professional Regulation after two inspections found multiple issues.

The inspections were performed on September 24th and September 25th. The first inspection was apparently so bad that the inspector returned the following day, giving the restaurant time to correct problems. While some were corrected, other issues were found, leading the inspector to note that an “administrative complaint” is recommended against the restaurant.

A third inspection is now pending.

High Priority – Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours….eggplant 44° in walk in cooler . High Priority – Ready-to-eat, time/temperature control for safety food marked with a date that exceeds 7 days after opening/preparation….meat sauce date marked 9/15 at walk in cooler . Stop sale issue . Employee discarded food. **Corrected On-Site** **Warning**

High Priority – Stop Sale issued due to food not being in a wholesome, sound condition…. Ready-to-eat, time/temperature control for safety food marked with a date that exceeds 7 days after opening/preparation….meat sauce date marked 9/15 at walk in cooler . **Warning**

High Priority – Stop Sale issued on time/temperature control for safety food due to temperature abuse…. Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours….eggplant 44° in walk in cooler . Per manager it was cooked yesterday. **Warning**

High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit….cooked chicken, mushrooms, mozzarella cheese, dressings, grilled onion ….bruschetta, blue cheese, feta cheese, all at between 44°-45° in salad cooler and across from fryer reach in cooler at kitchen. Food being held less than four hours. Employee covered food and adjusted thermostat……. Sauce, soup, cheese , chicken, meat sauce , beef all at 45°-44° in walk in cooler. Manager stated that door was opened for several delivery. Employee closed door. **Corrective Action Taken** **Warning**

Intermediate – Food-contact surface soiled with food debris, mold-like substance or slime….can opener blade. Employee cleaned. **Warning**

Intermediate – Handwash sink used for purposes other than handwashing…stored bottle, dumped ice in handwashing sink . Employee moved **Corrected On-Site** **Repeat Violation** **Warning**

Intermediate – No chemical CHLORINE test kit provided when using sanitizer at warewashing machine or wiping cloths. **Repeat Violation** **Warning**

Intermediate – No paper towels or mechanical hand drying device provided at handwash sink by the ice machine. Employee provided it. **Corrected On-Site** **Repeat Violation** **Warning**

Basic – Accumulation of black/green mold-like substance in the interior of the ice machine/bin. **Warning**

Then, when an inspector returned on September 25th, these violations were noted:
