Charleys Philly Steaks At Boca Raton Town Center Mall received an “administrative complaint” from Florida’s Department of Business and Professional Regulation.

BOCA RATON, FL (BocaNewsNow.com) (Copyright © 2021 MetroDesk Media, LLC) — The Florida Department of Business and Professional Regulation suggests that if you are need of a Philly Cheesteak, heading to Philadelphia may be a better option than heading to Charley’s Philly Steaks in Boca Raton’s Town Center Mall.

Charley’s received an “administrative complaint” after an inspector found several issues during two days of inspections.

On September 30th, an inspector noted these items:

High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. #1: cooked onions (72°F – Hot Holding) Observed cooked onions being stored at room temperature. Operator states less than 1 hour. Operator moved onions to a metal pan and will start hot holding. #2: cheese (45°F – Cold Holding) provolone cheese (47°F – Cold Holding) Observed at front counter reach-in cooler and prep area. Ambient temperature of cooler is 50°F. Operator states items have been in cooler for less than 2 hours. Operator moved items to a working cooler. **Corrective Action Taken** **Warning**

Basic – Wet mop not stored in a manner to allow the mop to dry. Observed mop not in use being stored in mop bucket with water. Operator dumped water and stored mop upside down to dry. **Corrected On-Site** **Warning**

Basic – In-use utensil in non-time/temperature control for safety salt and pepper not stored with handle above top of food within a closed container. Operator stored handle upright. **Corrected On-Site** **Warning**

Basic – Carbon dioxide/helium tanks not adequately secured. **Warning**

Basic – Bowl used to dispense sugar. Operator removed. **Corrected On-Site** **Warning**

Basic – Employee lockers located in a food preparation, food storage or warewashing area. #1: observed a soda cup stored on dry storage rack above dry foods. Operator removed. #2: observed a water bottle stored on a food prep surface. Operator removed. **Corrected On-Site** **Warning**

Then, on October 1st, the inspector returned. These are the documented notes from that visit:

Charley’s was NOT ordered to close, but will be subjected to another follow-up inspection.
