BOCA RATON, FL (BocaNewsNow.com) (Copyright © 2021 MetroDesk Media, LLC) — An East Boca Raton Italian Restaurant was cited by the Florida Department of Business and Professional Regulation for multiple high priority violations. The inspector cleared the violations during a follow-up inspection the following day.
Le Sorelle at 6020 North Federal Highway received a “warning” during its inspection on November 18th. The following is what the DBPR inspector wrote:
High Priority – Raw animal food stored over/not properly separated from ready-to-eat food. Raw meat stored above cream in cook line cooler. Operator reorganized **Corrected On-Site** **Warning**

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. butter (51°F); cream (49°F); ricotta cheese (50°F); cream cheese (50°F); fresh mozzarella (50°F); blue cheese crumbles (50°F); clams ambient (47°F); clams in liquid (temped liquid) (48°F) in walk-in cooler. Unit had an ambient temperature of 49°F-50°F. All items in unit overnight monitored unit for 1 hour with door closed and minimal entering. Retook ambient temperature at 43°F-45°F.
