BOCA RATON, FL (BocaNewsNow.com) (Copyright © 2022 MetroDesk Media, LLC) — Popular Greek Restaurant Taverna Kyma was cited for eleven health violations during an inspection on July 25th by the Florida Department of Business and Professional Regulation. The restaurant was not required to shut down.

High Priority – Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. At steam table; chicken (109°F – Hot Holding), being held double panned. Operator stated being held less than 4 hours, moved to grill to re-heat. **Corrective Action Taken** **Warning**

High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At Left make top cooler; cut tomatoes (57°F – Cold Holding); mashed potatoes (56°F – Cold Holding); feta (70°F – Cold Holding). Operator stated being held less than 4 hours, moved items to walk-in cooler. At cook line; hummus (74°F – Cold Holding);calamari (66°F – Cold Holding). Items being held on counter on ice, ice melted not reaching product line. Operator added ice. At cook line; spanakopita (70°F – Cold Holding), being held on sheet tray on counter. Operator stated being held less than 4 hours, moved to walk-in cooler. **Warning**

High Priority – Raw animal food stored over/not properly separated from ready-to-eat food. At walk-in cooler; raw beef stored over ready-to-eat feta cheese, raw salmon stored over cooked greens. At bar; approximately 6 live, small flying insects flying around and landing on ice tea pitchers. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. At bar dish machine; chlorine sanitizer 0ppm.
