ELEVEN VIOLATIONS LOGGED DURING STATE INSPECTION.

BOCA RATON, FL (BocaNewsNow.com) (Copyright © 2022 MetroDesk Media, LLC) — Smokey Bones at 21737 State Road 7 in Boca Raton received eleven violations during an inspection by the Florida Department of Business and Professional Regulation on November 1st. The restaurant was not ordered to shut down. A follow-up inspection the following day found the restaurant in compliance with rules and regulations.
Of the violations, five are considered “high priority” violations. Per BocaNewsNow.com policy, we are publishing the text of the inspection report without editing.
High Priority – Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Observed 2 small flying insects in kitchen by smokers and warewashing area. Operator attempted to exterminate. **Warning**
High Priority – In-use utensil stored in unclean water at or above 135 degrees Fahrenheit. Observed tongs in water on grill counter in dirty water. Operator replaced water at time of inspection. **Corrected On-Site** **Warning**
High Priority – Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dishmachine at 10 ppm chlorine. Operator replaced sanitizer and recalibrated to 100 ppm. **Corrected On-Site** **Warning**
High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed walk-in cooler – beans, brisket, bean sauce (54F – Cold Holding); raw chicken (53F – Cold Holding); steak (53F – Cold Holding); ribs (53F – Cold Holding); wings seasoned (51F – Cold Holding); per operator cooler was open for approximately 1 hour 30 minutes from 1:00 pm to 2:30 pm. Operator took ice bags and put on food items to assist cool. cook line pantry double door – wings (52F – Cold Holding); cook line drawers window – cut tomatoes (52F – Cold Holding); cheddar cheese (52F – Cold Holding); meat loaf (50F – Cold Holding), per operator items were put into units around 11:00 am and left. Operator removed and stored in walk-in cooler to cool. **Corrective Action Taken** **Warning**
High Priority — Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed middle steam cabinet – brisket (123F-134F – Hot Holding); , per operator brisket was stored at front of unit for approximately 1 hour. Operator reheated at time of inspection. **Corrective Action Taken** **Warning**
Intermediate – Handwash sink not accessible for employee use at all times. Observed handwash sink at dishmachine blocked by cart. Operator removed cart. **Corrected On-Site** **Warning**
Basic – Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Observed Light by ice machine unshielded. **Warning**
Basic – Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed interior of smoker racks and walls with food debris accumulation. **Warning**
Basic – Ice buildup in reach-in cooler and/or walk-in freezer. Observed ice build up in walk-in freezer on back of coils. Observed ice build up in cook line fryer make table on cooling unit in bottom of unit. **Warning**
Basic – Dead roaches on premises. Observed 2 dead roaches in light fixtures above warewashing area and above prep area. Operator removed and cleaned light fixtures and sanitized surrounding area. **Corrected On-Site** **Warning**
Basic – Ceiling/ceiling tile shows damage or is in disrepair. Observed ceiling damaged above double stack ice machine. **Warning**
An inspector returned on November 2nd and recorded no violations.
