BOCA RATON, FL (BocaNewsNow.com) (Copyright © 2023 MetroDesk Media, LLC) — Boca Raton-area caterer “Potions In Motion” is facing multiple violations filed by a health inspector with the Florida Department of Business and Professional Regulation. Eleven violations were logged over two inspections conducted over two consecutive days. Per BocaNewsNow.com policy, the following is the unedited violation list as filed by the State of Florida. We note the catering service was not shut down at any time.

INSPECTION DATE: September 28, 2023

High Priority – Ready-to-eat, time/temperature control for safety food marked with a date that exceeds 7 days after opening/preparation…vodka sauce made with heavy cream, tomato sauce date marked 9/16/23, cheese sauce date marked 9/6/23, sun dried tomato sauce date marked 9/5/23 at walk in cooler. Stop sale issue. Repeat Violation Admin Complaint

High Priority – Stop Sale issued due to food not being in a wholesome, sound condition….. Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit…corn beef 48°, several kind of cheeses 48° , cream cheeses 47°, yogurt 48°, milk 48° , several kind of sauce 47° ham 47°, buttermilk 48°, heavy cream 47°, noodles 47°, tomato sauce 48°, roasted pepper 47° at walk in cooler. Chef not aware how long food being out of temperature. Repeat Violation Admin Complaint.

High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit…corn beef 48°, several kind of cheeses 48° , cream cheeses 47°, yogurt 48°, milk 48° , several kind of sauce 47° ham 47°, butter milk 48°, heavy cream 47° , noodles 47°, tomato sauce 48°, roasted pepper 47° at walk in cooler. Chef not aware how long food being out of temperature. Take ambient temperature 47° and 46° … take another ambient temperature after 30 minutes it was 51-50° cause chef state that door was keep opening for the party. Stop sale issue. Advice chef discarded food. Repeat Violation Admin Complaint.

High Priority – Warewashing sanitizing solution exceeding the maximum concentration allowed…. 3 components sink chlorine 200 +++ ppm. Employee diluted at 100 ppm. Corrected On-Site.

Intermediate – Manager or person in charge lacking proof of food manager certification.

Intermediate – No proof of required state-approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff).

Intermediate – No soap provided at handwash sink by the dishwashing sink.

Intermediate – Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked….pasta, cream cheese mixed with pesto, chef not aware when was cooked. Chef discarded food.

Stop sale issue. Advised to operator discarded food. Warning – From follow-up inspection 2023-09-29: No TCS food stored all violated cooler. Admin Complaint.

Potions in Motions was NOT ordered to close or cease operation at any time. An unannounced repeat inspection is planned.
