Rocco’s Tacos Delray Beach Cited For Ten Violations During Health Inspection

DELRAY BEACH, FL (BocaNewsNow.com) (Copyright © 2023 MetroDesk Media, LLC) — Delray Beach mainstay Rocco’s Tacos received ten violations during a recent health inspection by the Florida Department of Business and Professional Regulation. Two of the violations were considered “high priority,” the top level of violation issued by the State of Florida.

The restaurant was NOT required to shut down after the inspection, but will now be subject to an unannounced follow-up. Per BocaNewsNow.com policy, the following is an unedited list of violations as recorded by the inspector.

High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At cook line middle single door lift top cooler ; pico (47°F – Cold Holding); mozzarella (48°F – Cold Holding). Operator stated being held less than 4 hours, moved items to left side lift top cooler. **Corrective Action Taken** **Repeat Violation** **Admin Complaint**

High Priority – Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. At Bottom Alto Sham; black beans (108°F – Hot Holding); tomato sauce (96°F – Hot Holding). Operator stated being held 1 hour, moved items to be re-heated. **Corrective Action Taken**

Intermediate – No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths.

Basic – Food stored on floor. At beer walk-in; container(s) of cut limes/lemons stored on floor. Operator removed from floor. **Corrected On-Site**

Basic – In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. At four storage container; scoop handle laying in flour. Operator removed. **Corrected On-Site**

Basic – In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container. At cook line make top; scoop handle laying in pico. Operator removed. **Corrected On-Site**

Basic – In-use utensil stored in sanitizer between uses. At bar; fruit muddler stored in sanitizer between use. Operator removed. **Corrected On-Site**

Basic – Standing water in bottom of reach-in-cooler. At cook line middle lift top cooler; standing water in bottom.

Basic – Stored food not covered. At walk-in cooler; stored cooked pork and rice stored uncovered. Operator covered. **Corrected On-Site**

Basic – Wiping cloth sanitizing solution stored on the floor. At cook line/prep area/bar; wiping cloth solution stored on floor. Operator removed from floor. **Corrected On-Site**

The inspection was performed on January 24th. The restaurant was not required to close. A follow-up inspection is pending.
